Pour-over, the house way

Small-batch roastery & coffee bar
We roast single-origin lots in 12 kilo batches every Tuesday, rest them for seven days, and ship at peak flavour — never from a warehouse shelf.
The shop
Every bag is roasted to order on Tuesday and stamped with its roast date. Pick a size and a grind — we grind minutes before your order is sealed.
Our story
Ember Oak started in 2016 with a secondhand drum roaster and a stubborn idea: coffee tastes better when it is roasted in small batches and sold within days, not months.
Nine years on, the idea hasn't changed — only the family has grown. We buy from twelve farms we visit and pay above fair-trade rates, roast every Tuesday at our Portland workshop, and cup every batch before a single bag is sealed. If a roast doesn't pass the table, it doesn't leave the building.
Brew guides
Two recipes we use at the bar every morning. Start here, then adjust to your taste — coffee should bend to the drinker, not the other way round.

Pull a 1:2 shot in 28 seconds with Midnight Oak, then steam milk to a glossy 60°C. Pour steady from height, finish low and close — the rosetta draws itself.
Visit the roastery
The bar pours the full menu, and the roastery window is open all day — Tuesday cuppings at 10am are free, just show up.
